When the pandemic forced Guelph landmark restaurant The Cornerstone to curtail sit-down dining, it pivoted to offer pizza using ingredients from other local businesses. For instance, Trotters’ pizza uses meats from a small downtown butcher shop and charcuterie.
Because of Ontario’s relaxed pandemic liquor laws, restaurants are able to offer alcohol for delivery. Hence the name: you can order pizza and a pint. The business owner Mark Rodford wanted to play with pi, so I used the first 20 digits (3.1415926353589793238) as toppings, along with a stylized ’za and Rainier, a nice, handrawn font from Kimmy Design.
Mark did extensive testing to find a perfect crust, and the crust is the delicious base for this hugely comfortable treat.
